KFC copycat (Buttermilk Fried Chicken)
Ingredients :
500 grams chicken (I'd prefer thigh or leg)
Brine ingredients:
2 cup of buttermilk
1/4 teaspoon of salt
1/2 teaspoon of sugar
blackpepper
paprika powder
For 1st coating :
1 egg
1/2 teaspoon of paprika powder / hot sauce
1 1/2 cup all purpose flour
1 1/2 teaspoon of paprika powder
1 1/2 teapoon of garlic powder
1 teaspoon of blackpepper
2 teaspoon of chopped oregano
1 teaspoon of chicken seasoning
2 teaspoon of bread cumbs
1/2 teaspoon of salt
1 teaspoon of cayene powder
1/4 teaspoon dried sage
1 teaspoon marjoram powder
Preparation :
# Wash and clean chicken pieces
# Brine the chicken with for 5-7 hours on the fridge (not less than that) to make moist and tasteful inside
Instructions :
1. Combine flour with cayene, garlic,paprika, sage, oregano, breadcumbs, blackpepper, salt, chicken seasoning and set aside

Add with all purpose flour |
2. Fully coated chicken pieces in brining mixtures and keep it on the fridge
Brine the chicken to make moist and tasteful inside |
3. Take brining chicken out from the fridge and driving the excess of buttermilk mixtures
4. Keep brining chicken on room temperatures for about 25 minutes before frying..
5. Dip chicken in 1st coating mixtures then dredge each pieces to seasoned flour (2nd coating mixtures)
(Repeat with all chicken pieces)
5. Add vegetable oil on a deep saute pan, use enough oil to cover all the chicken
6. Add chicken when oil is really hot to make crispy outside
look at the crispness and moist inside.. :) |
7. Flip over the chicken after 10 minutes and low the heat to medium
7. Frying for another 10-15 minutes
8. Remove from the pan, and transfer to a cooling rack for a couple minutes
