KFC copycat (Buttermilk Fried Chicken)





Ingredients :


500 grams chicken (I'd prefer thigh or leg)

Brine ingredients:
2 cup of buttermilk
1/4 teaspoon of salt
1/2 teaspoon of sugar
blackpepper
paprika powder


For 1st coating :
1 egg
1/2 teaspoon of paprika powder / hot sauce


Seasoned flour / 2nd coating :
1 1/2 cup all purpose flour
1 1/2 teaspoon of paprika powder
1 1/2 teapoon of garlic powder
1 teaspoon of blackpepper
2 teaspoon of chopped oregano
1 teaspoon of chicken seasoning
2 teaspoon of bread cumbs
1/2 teaspoon of salt
1 teaspoon of cayene powder
1/4 teaspoon dried sage
1 teaspoon marjoram powder



Preparation :

#  Wash and clean chicken pieces
#  Brine the chicken with for 5-7 hours on the fridge (not less than that) to make moist and tasteful inside


Instructions :

1.    Combine flour with cayene, garlic,paprika, sage, oregano, breadcumbs, blackpepper, salt, chicken seasoning and set aside

All needed spices 
Add with all purpose flour 

2.     Fully coated chicken pieces in brining mixtures and keep it on the fridge

Brine the chicken to make moist and tasteful inside

3.     Take brining chicken out from the fridge and driving the excess of buttermilk mixtures
4.     Keep brining chicken on room temperatures for about 25 minutes before frying..
5.     Dip chicken in 1st coating mixtures then dredge each pieces to seasoned flour (2nd coating mixtures)
        (Repeat with all chicken pieces)
5.     Add vegetable oil on a deep saute pan, use enough oil to cover all the chicken
6.     Add chicken when oil is really hot to make crispy outside


look at the crispness and moist inside.. :)

7.     Flip over the chicken after 10 minutes and low the heat to medium
7.     Frying for another 10-15 minutes
8.     Remove from the pan, and transfer to a cooling rack for a couple minutes


Roasted Lemon Mackerel


Have you heard mackerel fish..?
Of course you have..:)




Are you feel bored with that..?
Fried or just spicy mackerel..?
Don't you want to make a healthy one..?
Why don't you roasted them with a lot of seasonings.
No more tasteless, no more fat.. :)

Let's have a look..!

                                                       
Ingredients : 

4 mackerel fish
4 cloves of garlic, minced
1/2 lemon juice
lemon zest
1 teaspoon paprika powder
4 teaspoon of olive oil
chopped thymes
chopped oregano
a pinch of salt

Preparation: 

#  Pre heat oven to 375 F
#  Slightly butter the baking pan or use parchment paper on it


Instructions :

1.    Clean the fish and remove all gills inside.  
2.    Put all seasoning into one bowl
3.    Grate lemon skin to produce the lemon zest
4.    Add lemon zest and add a pinch of salt
5.    Marinated fish with all the seasonings
6.    Set aside fish for about 15 minutes
7.    Roasted it for about 20 - 25 minutes until pale white in colour
8.    Remove from the oven and let for a couple minutes to serve





Molten Lava Cake (Gluten Free)

Almost everyone loves molten lava cake...
This cake is fudgy outside and soooo moist inside..
Suprisingly, it's gonna melt once you sliced it...


Yes... you can buy it in any cafe or cake shop.. 
But why don't you make it by yourself?
It's easy.... super easy... just need couple of minutes...

So you can adjust your favorable taste..
I prefer to make it less sweet.
Because I don't like too much sugar..
What about you..?

In this recipe, I just made 2 small portions. 
I used very tiny ramekin...
but if you want more, just double my ingredients.. 
So, without further ado..
Let's check out the recipe..




                                                                           
Ingredients : 

1/3 cup of all purpose flour gluten free
1/3 cup sugar
1/4 cup of cocoa powder
226 grams / 8 oz dark chocolate
1/4 teaspoon salt
3 egg
113 grams /4 oz of unsalted butter
1/2 teaspoon vanilla extract

Preparation: 

#  Pre heat oven to 400 F
#  Slightly butter the ramekins and coat them with sugar


Instructions :

1.    Melting the dark chocolate using double boiler techniques
2.    Beat sugar and butter and sugar together until pale in colour
3.    Add 3 eggs gradually and keep mixing it until fluffy
4.    Pour vanilla extract into it
5.    Add flour gradually and keep mixing it until incorporated
6.    Pour your melted chocolate, mix it, but do not overmix
7.    And put your dough to the ramekin, place the ramekins into the baking pan
8.    Bake for another 10-13 minutes (depends on your oven)
9.    Cooling down for about 5 minutes
10.  Remove the lava cake by using spatula into your serving dish.
11.  Cut it and enjoy your molten lava cake.. :)





Butter Shrimps with Oyster Sauce


Shrimps are the most beautiful creatures... Besides the taste was so wonderful.. 
It also easy to cook.. without adding so many seasonings on it.. 

Shrimps.. is just simply and delicious as it is.. Grilled is a common way we used on shrimps.. 
Why we don't just saute them with a lil bit seasoning on it.. Simply but great..!!

I choose shrimps scampy on my recipe.. Because the taste is so incredible..  

But you can use any other shrimps.. 

The important thing is choosing the bigger.. Because the bigger is the better.. ;)









Ingredients : 

3 big shrimps scampy
3 cloves of garlic, minced
2 tablespoon light olive oil
2 chili stalk
Unsalted butter

For sauce : 
1/4 teaspoon of salt
1/4 teaspoon of sugar
1 teaspoon of ground black pepper
1/4 cup of oyster sauce
2 teaspoon of sweet soy sauce
1 teaspoon of worchestershire sauce


Instructions: 

1.     Clean the shrimps, use the whole of the shrimps




2.     Heat unsalted butter on the saute pan and saute garlic and chili until fragrant
3.     Add the shrimps, seasoning with salt, sugar and ground blackpepper



4.     Pour the worchestershire and oyster, sweet soy sauce gradually
5.     Leave for 8 minutes for thickening the sauce 


Meat Lover Pan Pizza


Who doesn't love pizza..?
I love it.. and I always take a big portion of it.. :)

But sometimes they found so hard on making pizza dough.. 

And I tried to make it simple. 
Sure... This is no fail pizza dough recipe
Be sure not to use hot water into your dough unless it will stop the yeast process. 

In this recipe, I just make small pan pizza
When small is enough, so bigger is too much.. :)




Ingredients : 

Pizza dough : 

1 1/4 cup of bread flour
1/2 cup warm water (35 C/105 F)
1 teaspoon of instant yeast
1/4 teaspoon of salt
1 teaspoon of sugar
2 table spoon of vegetable oil

--- Preparation :

# In a warm water, mix all ingredients together except bread flour.
# Beat the dough with mixer on speed no 1 (slow speed), add flour gradually into it
# Keep mixing until the dough is nicely smooth and shaped

Before increasing

# Rest the pizza dough on the refrigerator for 2 hours or more


And it become like this...


For sauce : 

1 can tomato sauce
1 1/2 teaspoon of salt
6 teaspoon sugar
1 teaspoon of black pepper
1 teaspoon of basil
2 teaspoon pizza seasoning
1 teaspoon of minced oregano

--- Preparation :

# Saute all together on the saute pan and seasoning it with salt and pepper.
# Cool it down, set aside


For topping : 

Mushroom slice
Shredded of cheddar cheese
Mozarella cheese
Beef sausage
Thin sliced of smoked beef
Oregano


Instructions: 

1.    Preheat the oven in 400 F 
2.    Place the pizza dough into the large wooden cutting board, before that add flour on the chopping board
3.    On the pizza baking pan, stretch the pizza dough to become bigger and bigger until covered all pan surface
4.    Top with the pizza sauce, and add slice mushroom, smoke beef, and beef sausage.
5.    Pour the shredded cheddar and mozarella cheese and seasoning with oregano
6.    Bake in the oven for 20 minutes. 




Butter Garlic Shrimps


I love shrimps... never bored with this one..
Besides it is so easy to cook, shrimps is delicious as it is

In other menu, I choosed shrimps scampy on my recipe.. 
But now I change to the small one.. 
But believe me, shrimps with butter is the most marvelous food ever..!! :)






Ingredients : 

1 cup of shrimps
3 cloves of garlic, minced
2 tablespoon light olive oil
chopped parsley
unsalted butter

For sauce : 
1/4 teaspoon of salt
1/4 teaspoon of sugar
1 teaspoon of ground black pepper

Instructions: 

1.     Clean the shrimps, use the whole of the shrimps
2.     Heat unsalted butter on the saute pan and saute garlic and until fragrant
3.     Add the shrimps, seasoning it with salt, sugar and black pepper
4.     Pour the chopped parsley as a garnish


Grilled Lamb in Chobani Sauce


Chobani is a kind of greek yogurt.. if you love yogurt, you must know about this... I love chobani, the tekstur is thicker, more creamy, and also contain all healthy things inside.

Making steak with heavy cream and chicken broth is a common thing that we always do. What if we combine our steak with chobani, the lovely greek yogurt ever... Besides it's healthy for us.. And the taste is amazing..!!




Ingredients : 

3/4 cup all purpose flour
2 tablespoon light olive oil
1/2 tablespoon salt
1 tablespoon ground blackpepper
1 1/2 tablespoon rosemary chopped rosemary
2 lamb racks, trimmed, frenched
1 tablespoon canola oil


For sauce : 
1/2 cup whole plain milk chobani greek yogurt
2 tablespoon unsalted butter
2 shallot minced
1 fresh rosemary
1/4 cup cream
1/2 teaspoon salt
1/4 teaspoon ground blackpepper


Preparation: 

# Pre heated oven to 475 F


Instructions :

1.     Seasoning lamb with salt, pepper and rosemary
2.     Heat a saute pan with a canola oil on medium high heat and cook lamb for 3 minutes on each side.
3.     And still with the same skillet, transfer it to the pre heated oven and roasted it for 5 more minutes
4.     Remove from the oven and let it rest for a couples of minutes.
5.     For sauce, in the same pan, remove the grease and add butter, shallot, rosemary saute for 2 minutes.
6.     Add cream and seasoning with chobani, salt and pepper


7.     Pour the grilled lamb with the sauce



Simply Tricks of Poaching Eggs


Who doesn't like the poached eggs? 
Even it is delicious and seems so easy to make.. 
There are simple tricks that can you use for making a beautiful poached eggs. 
The key is simmering your liquid. 

Because a  poached egg is an egg has been cooked by poaching
This method of preparation is favored because the consistency and predictable result can be obtained with precise timing.. 

Which is the boiling point of water removes the temperature variability from the cooking itself.





The simply techniques are :

1.    Crack egg into a bowl, do not crack directly to the pan
2.    Use only fresh eggs, otherwise egg yolk will be separate with the white egg
3.    Simmering the liquid by using vinegar, do not too much
       (otherwise the eggs will become acid and dry)
4.    Swirling water to create a whirpool to make easier poach eggs
5.    Serve with toast, avocado, and many else





Sweet and Sour Chicken (Ayam Asam Manis)


In a leisure time, I usually find something interesting to cook for my little family.. by trial and error and I've never exhausted to try a lot of recipes.. I'm so in love.. so in love with cooking.. :)




Here I am, as a wife,  just wanna try to make my husband stay at home longer.. :) So for making his daily food, I always find something new..And this is... I wanna share this recipe for you all..



Ingredients :

For chicken :
1 lbs fillet chicken (breast or thigh)
3 table spoon of corn flour
1 table spoon of soy sauce
1 whole egg
1/2 teaspoon salt
1 teaspoon of pepper


For sauce :
1 teaspoon of soy sauce
4 teaspoon of ketchup / tomato sauce
1 1/2 teaspoon of chilli sauce
a pinch of pepper
1 tablespoon of sugar
3 cloves garlic
1 onion
2 chilli stalk
Spring/green onion

Preparation :

Marinated chicken with soy sauce, salt, pepper, 1 egg, corn flour and leave for 5-7 minutes


Instructions :

1.     Heat vegetable oil on a fry pan on medium high heat
2.     Fry the marinated chicken on deep fry method for 5-7 minutes, until golden brown and set aside
3.     In other pan, saute one tablespoon of vegetable oil, and saute garlic 1-2 minutes
4.     Add onion, chilli and saute again until fragrant
5.     Pour the mixture of soy sauce, ketchup, chilli sauce into it
6.     Seasoning with salt, sugar and pepper
7.     Add fried chicken into it, and sprinkle with spring onion
8.     Serve hot for a better and crunchy taste..



Choco Cat's Tongue Cookies


Choco Cat's Tongue or known as Lidah kucing is crunchy and very simple to make. I always make this one a year, in Eid. Usually they are not using chocolate.. But in this recipe, I tried to combine with cocoa. The taste extremely amazing. With a cup of hot capucinno, or tea you can spent your afternoon with your lovely one. Try this..!! One try means another more bites.. :)




Ingredients :

125 gram of all purpose flour
1 table spoon of corn flour
125 gram of unsalted butter
3 egg white
1/2 teaspoon of vanilla extract
2 tablespoon of cocoa powder



Preparation : 

Pre heat oven to 320 F or 160 C
Lightly butter the cat tongue's baking pan  ( if doesn't have can use any baking pan )



How to cook : 


1.     Beat unsalted butter with granulated sugar and vanilla extract until pale
2.     And add sift flour and corn flour, salt, cocoa powder gradually
3.     Keep mixing it well
4.     Add white eggs gradually then beat again until fluffy
5.     Fill a pipping bag with the dough using a plain decorating tip
6.     Shaping the dough in a special cat tongue's baking pan









7.     Bake the cat's tongue dough in the oven for about 15 minutes
8.     Remove from the oven and put in the cooling rack









Blueberries Smoothies




Ingredients : 

6 blueberries
4 blueberries (do not blend)
1 tablespoon fresh ginger, cut into chunks
1 cup agave syrup
1 cup plain yoggurt / vanilla
lemon juice
1/2 cup orange juice
6 ice cubes

Blend it together until smooth and put 4 blueberries on top of it..


Benefits : 

As a hormon cortisol to your body and anti inflammatory



Ingredients : 

1/2 cup blueberries
1/2 unsweetened green tea
1/2 cup plain yogurt
3/4 cup strawberry
1 1/2 tablespoon flaxseed powder
6 ice cubes

Blend it together until smooth and put ice on it..


Benefits : 

Besides as a mood booster when you wake up, this smoothies is also as an anti oxidant for your body.


Rib Eye Steak






Ingredients : 

Rib eye
4 baby red potato
olive oil
unsalted butter
mushroom slice
3 cloves of garlic, minced
rosemary
chopped parsley
salt and pepper

For thicken sauce:
chicken broth
2 tablespoon of all purpose flour


Preparation: 

# Pre heated oven to 400 f or 204 C
# Seasoning baby potato with salt and pepper




# Seasoning and rub your beef with salt and pepper, set aside


Instruction :

1.    Put chopped potato into a skillet with one tablespoon olive oil.
2.    And then bake potato for 15-18 minutes until its tender
3.    Return the baked potato into a pan and saute with butter and chopped rosemary set aside
3.    On the other pan, saute garlic and mushroom until caramelize in color with olive oil and butter


4.    Seasoning with salt and pepper, chopped parsley and set aside
5..   Add olive oil into a pan, in medium high heat pan, make sure it is hot enough
6.    Put the beef, two minutes on each side to get medium rare
6.    Sprinkle with rosemary, and add butter into it
7.    Remove beef from pan, and keep it rest for couple of minutes
9.    On the same pan, pour the chicken broth and thicken sauce with flour (stir it to make sure no lumps)
10.  Add the remaining beef jus and seasoning with salt and pepper, set aside
10.  Plating the beef with sauted mushroom and baked potato
