Salmon and Roasted Garlic Asparagus





Ingredients : 

300 gram salmon
2 cloves garlic for salmon
1 clove garlic for asparagus
thyme
a pinch of salt
black pepper
a bunch of asparagus, trimmed
3 tablespoon olive oil

Instructions :

1.    Clean salmon and dry with paper towel gently
2.    Marinate with salt and pepper, set aside for 30 minutes
3.    Heat olive oil on medium high heat on the saute pan
4.    Fry salmon, skin side down to make crispier
5.    Add thyme, garlic, and flip it once after 2-3 minutes
5.    For asparagus, pre heat oven for 400 F or 204 C
6.    Place asparagus on the baking sheet, drizzle with olive oil, garlic, salt and pepper
7.    Bake asparagus untill just tender for 10 minutes
8.    Serve salmon and asparagus, squeeze lemon on top of salmon






Ayam Balado (Balado Chicken)






Ingredients : 

3 pieces of chicken (breast or thigh)
4 cloves shallot
2 cloves of garlic
3 chilli stalks
1 large tomato
1/2 teaspoon blackpepper
1 teaspoon salt
1 teaspoon sugar
vegetable oil
2 tablespoon of olive oil


Instructions :

1.    Clean chicken pieces, and marinate with salt and pepper, set aside for 30 minutes
2.    Blend shallot, garlic, chilli, and 2 tablespoon olive oil until become a thick paste
3.    Using a deep pot, deep fry all chicken pieces for 6 to 8 minutes, and turn it halfway
4.    Heat vegetable oil on the other pan and saute chilli paste on low medium heat
5.    Add sugar, salt and blackpepper and keep stir until all the oil is run out
6.    When chilli paste is cooked, toss chilli sauce with chicken pieces and remove from heat.







The Best Chicken Satay


There are many kinds of chicken satay in Indonesia. 
One of them known as Satay Maranggi or Sate Maranggi
which is very sweet in flavour, 

Commonly, they used beef for Satay Maranggi,
But I choosed chicken instead of beef..
Besides it's healthier, also chicken is tender than beef

Ingredients : 

500 grams chicken fillet (breast or thigh)
wooden skewers
5 cloves shallot
3 cloves of garlic
1/2 teaspoon of cumin
1/2 teaspoon of corriander
1/4 cup tamarind extract
1/4 cup palm sugar, minced
1/4 cup granulated sugar
1/2 teaspoon salt
2 teaspoon of olive oil
1/4 cup of sweet soy sauce
2 stalk chilli


Instructions :

1.    Clean chicken pieces, dice into bite sized
2.    For sauce, Blend garlic, shallot, cumin, corriander together until smooth
3.    Add tamarind extract, palm sugar, salt and granulate sugar into the sauce, and stir it
4.    Marinated chicken in the bowl with sauce and cover the bowl with plastic wrap
5.    Refrigerate marinated chicken for at least 1 hour on the fridge
6.    After 1 hour, thread each piece of chicken onto wooden skewers
7.    Pre heat grill to medium heat
8.    Grill for 6 to 7 minutes , turn the skewers and grill until no longer pink
9.    Remove from the grill pan and serve with sweet soy sauce, chopped shallot and chilli..





Salmon Sashimi






Ingredients :

1 lbs of salmon
3 table spoon of soy sauce
1 teaspoon of sugar
1/4 teaspoon salt
1 1/2 cup water
1 lemon
wasabi
pickled ginger

Instructions :

1.     Cut salmon into bite sized pieces
2.     Remove skin and fishbone.
3.     Stir salt and sugar in a bowl of water
4.     Brine salmon in a salt sugar water solution and let it for 5 minutes
5.     Drain the water solution and gently pat dry fish with paper towel
6.     On a serving plate, arrange salmon
7.     Put soy sauce into a bowl and serve with lemon pieces, wasabi and pickled ginger..
